With the festive season well underway, the days have been flying by and I have to admit I haven’t had much time to devote to my favourite pastime of dreaming up and testing out new recipes. Luckily, two lovely ladies I work with gave me the idea for this mulled white wine recipe, which was not only quick to refine but also fun to test.

I love mulled red wine but sometimes find it quite heavy, so this light, citrussy white wine alternative makes a refreshing change. With hints of lemon, ginger and honey, this is especially comforting if you’re at the tail end of a winter cold. The apple juice and elderflower cordial add fruity, floral notes and a sweetness that makes the wine irresistibly drinkable.

You can make this mulled wine earlier on the day you plan to use it or even the day before – just reheat it before serving. It tastes all the better when the flavours have had some time to infuse.

Instructions
  1. Slice the ginger into thin strips.
  2. Place all ingredients in a medium-sized saucepan. Heat over a medium heat until the mixture almost reaches simmering point. Then reduce the heat so that the wine stays warm but isn't hot to drink. Leave over a low heat until you've finished serving or set aside to reheat later.
